Ground ginger and gingersnaps are a spicy complement to sweet peaches. Check the natural foods section of your supermarket and read the nutrition labels on your gingersnaps to find a brand without trans fats.
Makes 4 servings
ACTIVE TIME: 10 minutes
TOTAL TIME: 25 minutes
EASE OF PREPARATION: Easy
4 peaches, halved and pitted
1/3 cup sugar
1/4 cup lemon juice
2 tablespoons water
1/2 teaspoon ground ginger
4 gingersnaps, crushed
1. Preheat oven to 425°F.
2. Place peaches cut-side up in a shallow 1-quart baking dish. Bring sugar, lemon juice, water and ginger to a simmer in a small saucepan. Pour over the peaches and sprinkle with gingersnaps.
3. Bake until the peaches are tender and the syrup is thickened, 15 to 20 minutes.
NUTRITION INFORMATION: Per serving: 168 calories; 1 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 42 g carbohydrate; 1 g protein; 2 g fiber; 46 mg sodium; 306 mg potassium. Nutrition bonus: Vitamin C (25% daily value).
